This recipe is super yummy. In fact, Adam finished his entire plate last night. That very rarely happens on “try a new recipe” night. Granted, this is extremely simple and quick, so it’s hard to mess up
I didn’t have any almonds, and refused to pay the high price, so substituted oatmeal in this recipe.
1 pound pork tenderloin, trimmed and cut diagonally into 1/2-inch-thick slices
For a dipping sauce, mix 1/4 cup honey (I used agave nectar) 2 tbsp soy sauce, and 2 tbsp Dijon Mustard.
The hub’s plate was filled with the pork strips (don’t they look like chicken strips?), broccoli and a twice baked potato.
For the potato, I split a left over baked potato in half, scooped out the middle and mixed it with ricotta and some pepper. Then I threw it into the oven for the last couple minutes with the pork. Yum right?
After dinner we proceeded to watch more episodes of Big Love (so addicted!!) and had a late night snack.
Hubby made his white russian, per his usual kick and I mixed some vodka with pink lemonade, Crystal Light style, in our fancy glasses. Something about fancy glasses makes drinking something fruity so much fun

This is how he prefers to lay. The kitty has been incredibly needy lately… lots of crying and following us around. I think he still feels guilty for breaking my measuring cups . He shouldn’t, because I was able to replace the broken 2 with a set of 3 for $9.99 @ Target
My pictures still stink. I read that if you take pictures without the flash, they should turn out better on the point and shoot. I think I need to do some major research… When our tax return comes back we’re going to get a fancy DSLR. Hubby and I bought a couple books on cameras and already have our model picked out. I can’t wait to really learn to take good pictures!!
No running for me today, I’m still sore from yesterday !! I’ll combine it with tomorrow’s workout @ the fitness center on campus.

Hubby and I tend to get very snack and usually have a night-cap. But we’re out of wine, so we’ve been fancier lately
