My of my favorite brunch spots, Quintessence in NYC, has moved from agave to xylitol in their drinks.
I had my first xylitol chai latte this week and I really enjoyed it. I prefer it over stevia because it doesn't have that weird after taste.
I first heard about xylitol from Dr Gabriel Cousens and Courtney Pool. They like using at the Tree of Life becase it does not raise blood sugar levels.
As I understand there are two types of xylitol formulas out there. Birch and corn. Quality brands use birch.
What are your thoughts about xylitol? Have you tried it?
