The journey has continued south, from NYC to the beach of Jacksonville Florida for a 7 day juice fast and some extra time for post-fast activities. As I mentioned in a post a while back, I fasted with my friend Adam from The Life Food Experience, who I've nicknamed The Juice Doc. I couldn't have asked for a better fasting experience (this was my first one longer than 3 days). I was totally taken care of... the Doc provided me with freshly squeezed juices, water, kombucha, and a magic elixir tea around the clock. It was surprisingly easy and I attribute that to having support and being in a warm environment - trying to fast at home in Canada right now while it's cold and snowing is a total turn off.
There was really only minor dilemma - two raw chefs fasting together = a LOT of talk about food, recipes, what we were going to eat and make when we were finished the fast! Of course there was much talk about chocolate, since it is my favorite food and I don't remember the last time I went even a day without it. I can proudly say I've easily gone 9 days without cacao!
On the evening of my arrival we enjoyed our last meal: one of my favourites, and the king of all fruits - DURIAN! Creamy, sweet with a bit of a strange smell and taste if you're not used to it.
Day 1: Adam was at it early in the morning, making gallons of juice for the day - enough for 7 people. Our daily juices consisted of celery, cucumber, kale, romaine lettuce, and ginger. We also had a bit of fresh pear juice that we could add to our green juices.
I developed a cold toward the end of my week in NYC - sore throat and stuffy nose. UGH. I don't remember the last time I had one. Perfect time to start a fast and get some rest after the busyness of that week.
Off to a good start! I was so thrilled to run down to the beach after guzzling down (errr....slowly sipping) my water and juice. I proceeded to hang out on the beach most of the day - did a bit of reading/writing/walking and basking in the sunshine, then went for a bike ride in the afternoon to explore the town center.
Day 2: More juice and liquids! More beach! More rest! One step closer to feeling magnificent!
I had the opportunity to be a part of a video that Adam and his friend Gary were in the process of finishing for a contest on climate change awareness. Check out the video HERE! They did an excellent job! We tried spinach, celery, grapes, and raspberries for my piece - for each take I had to take a bite - hold it in my mouth and then spit it out cuz I couldn't eat anything! Ah, so funny. It was a good time! Gary settled on the grapes for the final piece.
I can't believe it, but we actually made cheesy kale chips that day because we had an overflow of kale. They're super easy to make.
Stem and rip the kale, massage with some salt to break down the fibers, toss with a seasoned coating of your choice. Adam made a creamy coating of: cashews, chia seeds, nutritional yeast, himalayan salt, and miso.
Spread in a layer on screen sheets and dehydrate until crispy (we did them about 14 hours).
Currently we have broken our fast 2 days ago so are slowly easing back into eating - every day I see the bag of these chips and am dreaming of tasting them! Soon soon....I must be patient!
