Raw Vegan Recipe: Kristen Suzanne’s Harvest Soup Recipe

Having plenty of raw food on hand is one of the keys to success with living the raw food lifestyle; so, I always make plenty extra when I prepare Raw recipes. This way I always have something “ready to eat” for the next couple of days. Raw Soups are to be considered when planning the ready-to-eat menu. This soup also makes a great starter for any Raw Vegan Thanksgiving or Raw Vegan Christmas menu. Enjoy!

Who needs cooked food with this most delicious, full of colors soup? Those are two glass-mason jars full of the soup, in the background of the picture. I can drink the soup straight out of the jar, easily take it with me when I’m running errands, or snack on it late at night when I’m watching a movie.

Yield 6 cups

  • 1 cup water
  • 1 large zucchini, chopped
  • 2 medium tomatoes, quartered
  • 3 stalks celery, chopped
  • 2 cups carrot, chopped
  • 2 dates, pitted
  • 1 clove garlic
  • 2 teaspoons Himalayan crystal salt
  • 1 tablespoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup flax oil
  • Blend all of the ingredients, except for the flax oil, on high speed in your blender until really creamy (approximately one minute – I prefer this soup a tad warm and very creamy). Then, while the blender is running on low speed, add the flax oil. Continue blending, at a higher speed, for another minute or less. This will make it slightly warm. Enjoy!

  • Substitute olive oil for the flax oil
  • Add 1/2 teaspoon coriander
  • Add 1/2 teaspoon pumpkin pie spice
