What to do with all of my left over acorn squash from the other night?
Eat it for breakfast!!!
Okay, so that sounds kind of strange. Acorn squash for breakfast...but trust me, you're going to love this.
Here is my left over acorn squash from the other night:
To that I added one cup of organic pumpkin:
I tossed this into the food processor and added in 2 tablespoons of pumpkin pie spice.
After it blends, I added a drizzle of raw agave syrup to give it a little sweetness. You can also use Stevia instead of agave, and you could also use dates.
When I took the lid off the food processor, I was hit in the face with the smell of pumpkin pie. I swear, that pumpkin pie spice can make ANYTHING taste like pumpkin pie. All it is is cinnamon, nutmeg, cloves and ginger.
After that was mixed well, I prepared my breakfast bowl. I made a mini-tester sample to see how I liked it.
In this bowl is half a banana, a scoop of the acorn-pumpkin squash blend, 1 tablespoon of raw almond nut butter, and a quarter cup of organic oats.
Mix that all together and it looks like this:
This was really yummy, but I decided that I wanted to try a version with less oats and more squash, so in a bowl I combined:
One and a half bananas, 3/4 cup of squash, a sprinkle of oats and a tablespoon of raw almond nut butter.
After it's mixed, it looked like this! AND IT WAS SO GOOD!!!!!!!!!!! It was perfect. It tasted like a big bowl of pumpkin pie and it's so HEALTHY!
Acorn squash, organic pumpkin, banana, organic oats, pumpkin pie spice, and raw agave.
Feel free to customize this however you like! That's the fun part!
I have a huge bowl of the acorn squash-pumpkin blend left over which rocks...although it's so good I might eat it all by Monday.

I am sipping on some coffee (black) and listening to music. Then I am off for a run. It's FREEZING here already - 48 degrees this am in Philly! What is up with that? When did winter roll in? The Phillies play tonight WOOHOOOO! And it should be about 60-65 degrees by the time they take the field. I'm stoked.
