I have to say that I feel self-indulgent when I am sipping on my frothie smoothie filled with pineapple and perhaps a decorative slice slipped elegantly along the top of my glass. But, more than that, I feel my joints singing!
Pineapples are loaded with bromelain, a protein-digesting enzyme known for its powerful anti-inflammatory properties against such conditions as arthritis and gout. Pineapples are also high in manganese and vitamin C, ranking it high up in anti-oxidant status. Always select pineapples that are perfectly ripe and give slightly under pressure to be sure you are reaping the most nutritional and taste benefits. To maximize digestive benefits of the bromelain found in pineapples, ingest pineapple one to two hours before or after eating. As with many other foods, pineapple is best eaten in its raw state and as fresh as possible.
Here are a few of my favorite ways to enjoy pineapple:
Insert toothpicks into chunks of pineapple. Place in freezer for about 1 hour. Enjoy!!
First, mix coconut meat and water together in a high-speed blender. Retain approximately 1 cup of coconut milk in blender and add a large bunch of baby spinach, 1 cup pineapple and 2 frozen bananas. Mix and garnish with pineapple. You will immediately feel as if you were on a tropical vacation!
1 cup diced pineapple
¼ cup finely minced jalapeno pepper
Finely minced cilantro to taste
Lime juice to taste
Extra pineapple juice to taste
Dip with your favorite dehydrated crackers or veggies. Also, makes a great addition atop salads
