KALE-AVOCADO SALAD - I must eat something else besides tomatoes!

I’ve just gotten to the point that tomatoes taste like cardboard… I know these pretty bright red ripe fresh organic tomatoes are delicious, but I’ve been eating tomatoes and inhaling tomato fumes from dehydrating tomatoes since Thursday (it is now Sunday), and I have developed a tolerance that more tomatoes will not cure. (I will be dehydrating 5 more trays of tomato puree tonight)
It is time to eat something else — and I still have some kale!!!! This is a variation on my favorite kale dish… I can see making up the intensely massaged/softened/marinated kale with avocado mushed in afterwards. Yum!
KALE & AVOCADO SALAD
1 bunch kale, shredded 1 C tomato, diced 1 C avocado, chopped 2-1/2 T olive oil 1-1/2 T lemon juice 1 T sea salt 1/2 t cayenne
• Thoroughly combine all ingredients in a large bowl. • Squeeze mixture with your hands, simultaneously “wilting” kale and mashing the avocado to a creamy/sauce consistency • Serve right away (avocado will turn color as it is exposed to air.
VARIATIONS: Add fresh chopped herbs. Add seasonings, such as garlic, onion, chili powder, or curry powder
