I have been away from this site for over a week and am now just catching up on your odyssey with Paris. It does sound like you are making pretty decent progress with her. Brain damage in a very young puppy can be very tricky to diagnose and even trickier to predict an eventual outcome for. Sometimes, the best move is just what you're doing...general nursing care at home.
From your description, it sounds like you're seeing the various functions slowly return to their normal state. At this point, however, it is still impossible to determine whether she will return to full normalcy. As long as she is not suffering and you have the time to work with her, I'd suggest continuing your current efforts. It also wouldn't hurt to have her examined by a veterinarian in case there might be something addition you could be doing...I would understand if you wanted to go to a different veterinarian than the one who originally suggested to put her down.
