Who do you cook for?

I’m learning something completely new to me.  I have made what I thought were healthy meals.  The goal has always been a vegetable, a salad, a starch (rice or potatoes or pasta) and a meat of some kind.  Not bad right?  We do desserts on the rare occasion - usually pudding or baked apples.

Since having kids, I’ve started leaning heavily towards the carb side of meals.  The pasta or rice or cereal or bread seem to be the fastest to prepare and the kids’ favorite. They are not so keen on vegetables, soups, or fish.  So when push comes to shove, and we have to get a meal on the table quickly, it can end up being completely carbs.  Ie:  Kraft Dinner, cereal, toast, etc.

Here’s where I’m just bowled over.  Mike and I have both been talking about eating healthier for several months.  Finally Mike decided he was going to do it.  If we’re doing a toast night, he will wait until he can prepare something he actually wants or needs to eat.  Sometimes late at night, he’s in the kitchen grilling chicken and veggies. 

For years I would have found this midnight grilling behavior to be “spoiled”, picky, or self-righteous.  Now, I’ve discovered that people taking care of their bodies and nutritional needs, do actually prepare and eat what they need to.  You know how long Mike takes to choose what he’s going to eat?  It is amazing!  He actually looks online to see about portion sizes and servings, and calories.  He weighs and measures things to teach himself about portions.  He will spend 10 minutes just entering the data after he’s eaten into his weight/ calorie calculator thingie.  I am completely in awe of his dedication to learn what healthy eating is.  He actually goes to the store at any time of day or night, to get something that he needs to make his meal.  Whaaaa? Aren’t we just supposed to eat whats in the cupboard?  I have a sneaking suspicion I believe in the clean-your-fridge-out philosophy.  That’s what our livers are for, right?

I want to know what happens in your house regarding meal planning, shopping, and cooking.  Do you do it all?  What if one of the family is on a diet/ or needs to be.  Not that I have any experience with this.  ;)  then do you cook different meals?  Or does all this healthy eating stuff just come naturally to you?
