We’ve always been a fan of Jamie Oliver. The children love his TV shows and his latest 15 minute meals has entertained us, and made us salivate. We sometimes play ‘Jamie Bingo’ which involves us sitting round waiting for him to say a particular phrase like “whack it on” or “whizz it up”. With this series though, and as avid Yeo Valley Ambassadors, we’ve been playing Yeo Valley bingo – waiting to see a glimpse of a label during the show.
We’re stuck in a bit of a rut meal-wise. During the week the children do a variety of different activities after school, and I work shifts. This leaves a small window of opportunity for cooking. I do most of the cooking during the week and I go to my old faithful meals for reasons of practicality.
We already have Jamie Oliver’s book ’30 minute meals’ and cooked lots of things from that book – although one particular meal took us more than an hour and a half with both of us in the kitchen. So, I was slightly dubious about his new book – ’15 Minute Meals’, when it arrived, courtesy of my friends at Yeo Valley. 15 minutes? Seriously?
We had a look through the book, and also watched some of the shows. We decided to make jerk pork with grilled corn and a crunchy tortilla salad. I bought all the ingredients and The Husband took on the challenge. Twenty minutes later he emerged with our meal – I have to say it was awesome and probably the tastiest thing I have eaten at home this year. The jerk pork was delicious, the tortillas crunchy, the charred corn was full of flavour and the refreshing salad was a perfect accompaniment. The addition of the 0% fat natural yoghurt dolloped on the pork cut through the scotch bonnet spice a treat.
Yes, the kitchen looked like a bomb site but it was worth it. I’ll definitely be looking through the book for more mid-week inspiration.
