Do you remember that positively divine homemade caramels recipe I gave you a while back? Sure you do. It was the one that took at least an hour and a half before the good stuff even had a chance to cool. The one that sounded delightful but was so complicated and time consuming you continually put it on the back burner of your mind or filed it under "if I'm extremely bored and in the mood to clean up a holy mess." That one. I have broken up with it in favor of it's quick and delightful cousin.
Lickety Split Homemade Caramels Homemade Carmels for those of you who pronounce it the way I do

Yield: 60 or so, depending on how you slice them.

2 oz melted butter
4 oz light corn syrup
4 oz sweetened condensed milk
4 oz brown sugar
4 oz granulated sugar
1 T (.5 oz) pure vanilla extract
Line 8" square cake pan with parchment paper. Set aside.
Mix all ingredients except the vanilla in a somewhat large microwave safe bowl. I prefer to use a pyrex baking bowl, which I set on a folded paper towel in the microwave. It needs to be big enough to hold at least twice as much mixture as you have in the bowl, as it will bubble up and if the bowl isn't large enough, you will have a mess. Microwave 2 minutes. Remove using pot holders and stir. What? 2 minutes won't require potholders? You're probably right, but it's a good habit. Microwave 2 minutes. Remove using pot holders and stir. 4 minutes probably won't hurt without pot holders, but like I said, it's a good habit. Microwave 2 minutes. Remove using pot holders and stir. This is where you just burned yourself by thinking you didn't need pot holders unless you developed good habits. Perform a "drop test" by dripping the mixture off of your mixing utensil (I use a fork) into cold water. Remove the rapidly cooled test drop and check for consistency. Like it? You're done. If it's too soft, keep repeating the above, only 30 seconds at a time until you like the consistency. In my mom's 1100 watt microwave, 6 minutes is perfect. In my 900 watt microwave, it takes about 7 minutes. Stir in vanilla. Pour into lined pan to cool at least 2 hours. Cut with buttered pizza cutter and wrap in little squares of parchment paper. Eat the ones that just aren't shaped right. You know you want to.
