I made this tonight and I had to share. It was so easy and yummy. The Bear even said, "Ooooh, Mommy, I didn't think you could cook this good!" Personally, I think I have made better things, but this was yummy. Thanks, Mandy, for sharing!
3 Chicken breasts
1 can black beans
1 can sweet corn
1 jar salsa
Cook on low 4-5 hours until chicken shreds easily. Add 1/2 -3/4 of a package of cream cheese over the top and allow it to melt in for about 30 minutes- stir until smooth and serve over Cilantro Lime Rice!
So, I made a couple of changes because I didn't have the items on hand. I used pinto beans and I didn't have Cilantro Lime Rice so I made my own chips. This is quite simple. I take corn tortillas, spray it with cooking spray or spray butter, season it with pollo asada seasoning (you can use any seasoning you want), and then I bake at 400 for 10-12 minutes. The kids love it and it's a healthy meal. I wish I took a picture, but I was just happy they were eating without screaming at me!
