Garlic Ginger Mashed Potatoes#1

4-5 peeled and cubed potatoes

2 cloves of minced garlic

1 tablespoon minced fresh ginger

Low sodium chicken broth

Boil and mash your potatoes first and then set aside. Saute garlic and ginger in 1-2 tablespoons of olive oil until lightly cooked. Stir the oil mixture in and add the broth until you reach the desired consistency.

Making mashed potatoes without any butter or milk has been a challenge. Not anymore. Using the above recipe I was able to make creamy and delicious mashed potatoes. They tasted even better the next day when the garlic had really settled in!
