My family LOVES meatloaf. I’ve never really though about meatloaf having carbs – but, when I started looking at the ingredients….I noticed that the ketchup, brown sugar and bread crumbs are all carbs. Hmmmm!
So, what’s a girl to do? Google “low carb meatloaf”, of course! And I found one that looks really promising! Thought I’d share the recipe with you – and feel free to let me know what you think. I will probably change up the seasoning a little – since we like things a little spicier than most people!

1-1/2 pounds lean ground beef 1 Tbs Worcestershire sauce 1-4 oz can Italian seasonsed tomato sauce 1/3 cup crushed fried pork skins (I like the spicy ones) 2 eggs 2-1/2 Tbs chili powder 1 Tbs garlic salt 1 Tbs garlic pepper seasoning
Preheat oven to 375 degrees. In a large bowl, mix together the ground beef, Worcestershire sauce, tomato sauce, crushed pork skins and eggs. Season with chili powder, garlic salt and garlic pepper. Mix until well blended. Form into a loaf and place into a greased loaf pan. Bake uncovered for 35 to 40 minutes in the oven. Let stand for at least 5 minutes before slicing and serving.
