6 hard-cooked eggs, peeled, cut in 1/2 and yolks mashed in bowl
5 tablespoons mayonnaise
1 1/2 teaspoons vodka
1 tablespoon plus 1 1/2 teaspoon juice from a jar of green olives
1/4 teaspoon cayenne pepper
1 1/2 teaspoons finely chopped fresh Italian parsley
Black pepper, to taste
Slices of green olive, for garnish
Combine the thorougly mashed yolks with the mayonnaise, vodka, olive juice, cayenne and parsley. Taste, then season with black pepper. Fill the white evenly with the mixture and garnish with sliced green olives.
*NOTE: The next time I make these, I am going to make the following changes: I am decreasing the olive juice to just 1 tablespoon and I think I am going to add chopped olives to the mixture.
