Cookies for Breakfast!

This is one of the best cookie recipes I have found! I have a very hard time eating breakfast - just can't find the time to eat something before I am out the door - and if I do eat something before getting to the office - it's usually purchased at a drive-thru! I got this recipe from a friend of mine....and thought I would share!

TRAIL MIX COOKIES
2 cups margarine
2 cups brown sugar (I used Splenda)
2 cups sugar (I used Splenda)
4 eggs (I used Egg Beaters)
2 tsp vanilla
4 cups whole wheat flour
2 tsp baking powder
2 tsp baking soda
6 cups trail mix (i.e., raisins, banana chips, nuts, dried fruit, etc.)
1 cup raisins (or I used dried cranberries)
1 cup sliced almonds or walnuts
3 cups old-fashioned rolled oats
3 cups low fat granola mix

Preheat oven to 375 degrees. Mix margarine and sugars until creamy. Add eggs and vanilla. Sift together flour, baking powder and baking soda - then add them to the butter and egg mixture. Stir in the trail mix, raisins (or cranberries), nuts, oats and granola mix. When mixed well, shape into balls and bake on ungreased cookie sheets for 15 minutes.

*Dough can be refrigerated and baked as needed. Makes 8-10 dozen cookies.
