These are absolutely YUMMY! They are a mix of chocolate chip cookies and shortbread cookies. What more could a girl ask for? Right?
Chocolate Chip Shortbread Cookies
INGREDIENTS 1 ¾ cup all-purpose flour ½ teaspoon baking powder ¼ teaspoon salt 1 cup (2 sticks) unsalted butter, softened ½ cup granulated sugar ¾ cup mini semi-sweet chocolate chips ½ cup walnuts, finely chopped
INSTRUCTIONS Preheat oven to 275 degrees. Line cookie sheet with parchment paper.
In medium bowl, combine flour, baking powder and salt. In a large bowl, beat butter and sugar with electric mixer until light and fluffy. Add flour mixture to butter mixture; mix until fluffy. Stir in chocolate chips and nuts. Measure generous rounded tablespoons of dough; place on prepared cookie sheets, about 2” apart. Press to flatten lightly. Bake 60 minutes or until just slightly browned on edges. Remove from oven; cool 3 minutes. Remove to cooling grid; cool completely.
Makes about 2 dozen cookies.
*NOTE: I actually only cooked these cookies about 20-30 minutes (not 60 minutes). Just watch the first couple of batches until you know how quickly the cookies bake in your oven.
