The weather has suddenly turned crisp and cool here. It is a welcome change after a summer of record breaking heat. We had a bonfire the other night and roasted marshmallows. The pumpkins are canned, or frozen, but I kept about a quart fresh to try some pumpkin recipes now.
The first I made was a recipe posted by Burdock Boy last fall, Pumpkin-Blue Corn Rye Bread. It is not a sweet bread, but a delicious and soft multi grain bread. It calls for blue cornmeal, but I've only ever used yellow. Great with soup on a fall day.
Next on the list, Pumpkin Pancakes from Mom Advice. I've tried a lot of pancake recipes over the years, but this may be the best! These are light and fluffy with a rich flavor. They were so good I didn't even use syrup on them, just butter. W Whipped cream would have been great on them though.
Now to decide what to make next. There is only a small amount of the fresh pumpkin left. Delilah posted some recipes that look good. Laura also has some yummy recipes posted including one for pumpkin roll. There is a lady at our church who makes pumpkin rolls for almost every carry in dinner we have. They are so good! I've never had much luck making them look pretty. Mine taste good, but I can never get them rolled right! Maybe I just need more practice! A search using Scribbit's custom search engine find many more interesting recipes, including pumpkin soup.
Hmmm.... so many choices. Where to begin? It is a delicious dilemma!
