I came across this recipe while searching for an answer to a reader's question. Her cantaloupe are producing like crazy, and she wondered how she could preserve the melons her family didn't eat. The following recipe is one option. I have not tried this recipe. Normally I don't post something I haven't tried, but this sounds so good to me. Silvia, this is for you.
Cantaloupe Preserves Cut firm, not too ripe, cantaloupe into inch slices. Remove rind, seeds and pith. Dice. For 1 pound fruit, use 3/4 to 1 pound sugar. Add sugar to fruit. Cover and let stand several hours. Add whole stick cinnamon, thin slices of lemon, ginger root crushed. Heat slowly to boiling, then boil rapidly until cantaloupe is clear and tender. Seal in hot sterilized jars.
I think these preserves would be wonderful over chicken. wouldn't that be a nice taste of summer in the middle of the winter?
