Got up at 4:15 this morning and hit the bike/trainer for an hour and had a good ride. 30 minute tempo run tonight and then home for nice, warm chili! It is supposed to get stupid-cold tonight... everyone is wrapping up their trees, etc.
I'm feeling much better today about everything. Right now I'm not letting any negative thoughts enter my head. I am just working on being positive about everything! It's going to be great. It's going to be fun and I will achieve my goals!
Ingredients 1 lb. Chicken breast, diced, no skin/bones 1 Onion, medium, chopped 1 T. Olive Oil 2 Cans (15 oz.) Northern Beans 1 Can (14 oz.) Chicken broth 2 Cans Chopped green Chilis 1 t. Garlic powder 1 t. salt 1 t. cumin 1 t. oregano 1 t. black pepper 1 C. Lowfat Sour Cream
Directions Saute onion and chicken in olive oil. Add remaining ingredients (except sour cream) and simmer for 30 minutes. Mix in sour cream after simmering is complete.
You can also save time by using a rotisserie chicken and reducing the simmering time! Just add everything after the onions become translucent, simmer, then mix in sour cream.
