Eggplant & Italian Turkey Sausage Casserole
1 Box of Frozen, breaded eggplant cutlets 1.5 C. 2% Cottage Cheese 1 C. 2% Italian Blend Shredded Cheese 1 Package of Jennie-O Hot Italian Turkey Sausage 1 Lg. Can Hunts Traditional Tomato Sauce
Preheat oven to 425.
In a skillet, brown the turkey sausage then slice into bite-sized pieces.
In a covered casserole dish, cover the bottom with a thin layer of tomato sauce then set a layer of eggplant. Cover the eggplant with the Cottage Cheese and 1/2 C. of the Italian Blend Shredded Cheese and half of the sliced turkey sausage. Cover sausage with a light layer of sauce then the rest of the eggplant. Top casserole with remaining sauce, sausage and cheese.
Bake covered for 45 minutes.
About 325 Calories per serving; 26 grams of protein, 30 grams carbs.
