Ginger snap cookies are the perfect compliment to this sweet and tangy icy drink.

Are you looking for the perfect summer drink to serve at your next social gathering?  Try these sweet and tangy Lemon Coconut Creams.  Perfect for an elegant bridal shower or a backyard pool party, you can’t go wrong with this icy drink.

Lemon Coconut Creams


1 1/2 cups coconut milk beverage (such as SO Delicious Original Coconut Milk brand)

28 ice cubes

24 ounces of all-natural lemonade (fresh-squeezed homemade is best)

1/4 cup organic sugar

2 tsp pure vanilla extract

1/8 tsp ground nutmeg plus additional for garnish

1/8 tsp sea salt

6 (8 ounce) serving glasses


In small bowl combine coconut milk, sugar, vanilla extract, ground nutmeg, and salt. Set aside.  Place ice cubes in blender.  Add coconut milk mixture.  Using ice crusher setting, blend coconut mixture and ice cubes until a slush is formed.  Fill each serving glass halfway full with coconut-ice mixture.  Pour lemonade on top of coconut-ice mixture until serving glass is full.  Garnish each drink with a dash of ground nutmeg.  Serve immediately.
