I’m not a huge fan of acorn squash, I’ll confess.  If you are not and would like to substitute a summer squash instead, have at it.  I suspect that is what I will do.  Particularly at this time of the year.

The greens, however, sound fantastic and if you want perhaps you can mix them rather than just have one type.  It’s up to you.  No rules!  Just try it.

Green & Yellow Veggie Hash

  • 2 small acorn squash (or summer squash) diced
  • 2 grated carrots
  • 1/2 green apple, diced
  • 1 shallot, finely chopped
  • 3 Tble extra-virgin olive oil
  • 1 cup greens (kale, spinach or turnip, collard or mustard greens) cleaned, washed and shredded
  • 1 Tble minced garlic
  • 4 springs fresh sage
  • Salt & Pepper to taste

Saute’ the squash, carrots, green apple and shallots in olive oil until tender.  Mix in the greens, garlic, sage, salt & pepper.  Cook for 5 minutes.

Makes 6 servings
