And Lord, tell me a girl that doesn’t love to eat! If you love asparagus (and well, I do) then dressing up and asparagus have just found themselves in the same sentence.
Personally, I can eat asparagus with nothing on it at all and feel like I’ve died and gone to heaven. But, olive oil, lemon juice and almonds too? Good stuff! Eat up girls!
1 pound fresh asparagus
2 Tble extra-virgin olive oil
2 tsp lemon juice
Salt & Pepper to taste
1 1/2 Tble finely chopped almonds
1 Tble toasted flaxseed
Wash asparagus and trim ends. steam for 3 – 5 minutes until bright green and tender, but crisp. While asparagus is steaming, mix together olive oil, lemon juice, salt and pepper. In a separate bowl, mix the almonds and flaxseed. Drain asparagus and arrange on a serving platter. Drizzle with olive oil/lemon juice mixture and then sprinkle with nut/seed mix. Serve immediately.
