
Now that were in the summer season its time to get some serious grilling done, unless your like me and fire up the “Q” regardless of weather. Everyone has there own special recipes and tricks for the grill but here are my top 3 that never seem to get old.
The Only Burger
Over my years of cooking i personally think I have the best burger in the game and heres what i do;
mix in a large bowl 1 lb of lean ground beef, 1 egg, 1/2 a diced yellow onion, 1/2 cup of bread crumbs, and a pinch of garlic and curry powder.
Once its all mixed portion in patties about 3/4 of an inch high and sprinkle montreal steak spice over both sides of burgers. and they’re ready for the heat.
Cook for 6-8 minutes a side on a medium heat and you can put a bbq sauce of your choice if you want, although they don’t need it. If your making cheese burgers toss on the cheese about a minute before the burgers are done this way your not drying out the meat while waiting for the cheese to melt.
A trick to tell if the burger is done is when you see clear juices coming out of the burger it will be cooked though out, rather then the burger still bleeding.
Top the burger with whatever veggies and condiments you want and chow down. The side dish for burgers that I personally like to go with is the bake potato and corn on the cob.
Citrus Salmon
For the fish eaters im sure you’ve all had the problem of the fish falling apart and making a mess of your grill. To fix this problem try this recipe.
Get your fillet of salmon (I prefer Alaskan salmon) place it on a sheet of aluminum foil about 3 times as long as your fillet,
Paint the salmon with a layer of warm butter and season it with salmon spice and a touch of black pepper.
Thinly slice 2 lemons and 2 limes, you should have at least 20 slices each. Cover evenly with the slices underneath and on top of the salmon. This will add great flavor to the fish while it cooks.
Wrap everything in the foil and be sure to leave a little room for steam to build up and help cook the fish.
Cook for 8-9 minutes a side on a very low heat. Be careful when opening the foil, there will be steam inside.
Serve on a brown rice and asparagus for a healthy delicious meal.
The Ageless Steak
The best way i’ve found to cook the perfect steak is quite an art and ill teach you. Start by picking out your favorite cut of meat, I cook all steak the same with different times according to the thickness off the steak.
I always like to marinate my steak over night in whatever flavor you choose, (look for a hickory) and keep in the fridge.
After marinated you can add your favorite steak spice before you put it on the grill.
Fire up both sides of your bbq (one side on max and the other just about minimum). Once the grill is at max heat throw the steak on the hot side for about 25 seconds on each side to sear the steak. This will keep most of the juices in while it cooks.
After you’ve seared the steak put them on the low heat and put your lid down. Cook the steak 4-5 minutes a side for a medium rare steak and be sure to turn it 45 degrees half way for those beautiful grill marks.
After each time you flip your steak put on whatever bbq sauce you want for a little extra flavor if you’d like.
For the side dish you have to have your potato and then whatever green you want. I enjoy broccoli and cheddar cheese with the meal. While preparing the side dish make sure you fry up some mushrooms and onions to put on top of the steak, it adds some awesome flavor.
