There's nothing better than taking your steak off of the grill or out of the pan, only to be able to cut it open while it's still hot and watch the juices run out, right? Actually, there is. If the juices are running out of the steak, onto the plate, then that means they're not in the steak. If thy're not in the steak, then they're not gonna end up in your mouth. If they're not in your mouth, then you're not getting all the flavor you could be getting from your meat.
