We had a brief reprieve from the reno and were able to host our small group. Our small group is a group of families with small children ranging from ages 1 - 7. We meet every few weeks to fellowship, eat & study - our current study is a parenting study that is really changing how we deal with our 5 yo monkey. Since we bought half an organic grass-fed beef a while back, we chose to cook a roast for dinner. I'm a big fan of Pioneer Woman and Reluctant Entertainer (even though I'm not at all reluctant when it comes to entertaining, I just love her simple approach to things!). So, when both of them popped up with a roast recipe (Reluctant Entertainer using Pioneer Woman's pot roast ), I knew I had to try it!
Like her, I chose to cook & serve mashed potatoes on the side. Unlike her, I didn't cook the carrots. One of the moms asked that I leave the carrots raw for the kids, so we had raw carrots with ranch on the side. I used red onions (because that's what I had) and my own beef stock that was in the freezer. Not one bit of onions or roast were left over, if that tells you anything. I don't think anyone even noticed that construction saw dust in the corners that I didn't have time to sweep.
