What is the health benefit of eating gluten free for Lyme patients? Is low carb just as important as GF?

My husband's doctor has said my husband should eat gluten free, low carb, no sugar foods.  This is extremely difficult.  Is one thing more important than another?  Do Lyme patients have a hard time processing these types of foods?  What is the reasoning behind the doctor's recommendation?  My husband is very frustrated with his limited diet.
