Quinoa?

Hi My daughter was just diagnosed with Lyme and 2 co infections on western blot and co panel. We are changing her diet and I have read allot here on Quinoa so i went out and bought a bag of quinoa...does anyone know if I can bake muffins with it like as if it were regular flour? Do i just substitute the flour for quinoa in the muffin recipe? I have never used this stuff before.
