Menu Planning

I never can seem to follow a menu plan, but I finally think I stumbled upon something that will work.  It's as flexible and totally flows with my energy levels -- complicated or simple.  Here's what I've been doing.

Meatless Mondays
Taco Tuesdays (this really means anything ethnic)
Wacky Wednesdays (kid-friendly)
Dirty Thursdays (non-clean meal of the week)
Fish Fridays
Soup Saturdays (using up all the leftovers)
Roast Sundays

So, rather than specify specific recipes and meals each week, I just decided on categories.  Now I can pick as simple or as complicated as I want based upon how I'm feeling.  I also made a few lists on my iPhone listing out some recipes for each category, plus I have a few stand-by's that will always fit.

This week I've been battling a cold so I've kept it super-simple.  Monday we had vegetarian tacos - a super simple recipe that I can whip up any time with what I have in the pantry.  Tuesday I made enchiladas -- another super quick recipe that I can make out of what we have on hand.  Wednesday for the kids we had spaghetti.  Thursday I ordered pizza and fixed the hubby a cocktail.  Friday I thawed out some salmon burgers and served them with peas and green goddess sauce .

Now that I'm feeling better, next week I'm hoping to try some of the yummy recipes I pinned .  We shall see :)
