Gluten Free Ice Cream Sandwiches

So, not exactly healthy and far from being sugar-free, but these are delicious on a hot summer day.  I was on the lookout for a quick & easy cookie recipe that LittleA could make with some help when I stumbled upon this one using a cake mix.  We happened to have a Gluten Free devil's food cakemix in the pantry so we made them. Yummy.  (These would prob be good with any flavor cakemix, so experiment!) So I decided they'd make nice ice cream sandwiches.  The only thing I'd change if I was setting out to make ice cream sandwiches is to make the cookies smaller than I do when making cookies alone.  Also, you should know that these cookies are great alone for up to 3 days, but after that they start to dry out (as is common with most gluten free baked goods) so using them for ice cream sandwiches is a way to use them & extend their freshness.  Now, on to the recipe :)

Chocolate Fudge Cookies
1 cake mix
2 eggs
1/2 cup oil
1 cup chocolate chips (optional)

Preheat oven to 350 degrees.  Grease cookies sheets (I used silpat instead of greasing my sheets)

In a medium bowl, stir together the cake mix, eggs and oil until well blended. Fold in the chocolate chips. Roll the dough into walnut sized balls (I used a medium sized ice cream scoop). Place the cookies 2 inches apart on the cookie sheet.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

To make Ice Cream Sandwiches:
Allow desired flavor ice cream to soften a little.  Smash a little between take two cookies, wrap in plastic wrap, place in plastic bag & freeze.
