So I am a big fan of Amy 's and not just for the quick food fix, but for helping me stretch my food dollar with her beans, chili's and soups. My most comforting and favorite meal is a pot of veggie stew that I created on a rainy night with an empty cupboard and since I am not a novice in the "herb" and "spice" mix-em-up department I look for shortcuts.
I put this recipe (if you can call it one) together on a cold rainy night when there was nothing in the house but a few staples. So to one can of Any's Lentil Veggie Soup I cut up four large red potatoes and four small carrots and steamed in a cup of water in a soup pot for about 5 minutes. Then I added the Soup and a can of water, letting it simmer on medium low for about 20 minutes. Personally it should serve about 4 if you add a nice salad and some bread. For me, I can eat the whole thing if that's all I have...and I have been known to fix it for lunch and eat it throughout the day until sadly there is no more.
My later attempts to make this a whole meal did well when I added some nice homemade GFV bread from my Breadman machine (gotta love that GF Setting!). I timed it just right so that the bread was nice and warm and toasty with Earth Balance on it. What a wonderful comfort meal!
OK, I'm done sharing....time for lunch, I made myself hungry!
