Green beans are one of the best kidney-diet-friendly vegetables you've got. They're delicious and you can prepare them in hundreds of ways. Here are a couple of my favorites.
Lemon Butter Green Beans 1 can no-salt-added green beans or 1 box frozen green beans 1 tablespoon unsalted butter Juice of 1/2 lemon Generous grinding of black pepper
Drain the liquid from the beans if you are using canned. Heat in a small saucepan, adding the butter and lemon juice. Stir or shake the pan to combine. Season with black pepper to taste.
Green Beans with Onion 1 tablespoon extra-virgin olive oil 1 tablespoon unsalted butter 1 small onion, chopped 1 cup chicken broth 1 lb. fresh green beans, trimmed Freshly ground black pepper to taste
Melt the butter and heat the olive oil in a medium pan over medium heat. Saute the chopped onion 3 minutes, add the chicken broth and bring to a boil. Add beans, season to taste with freshly ground black pepper. Simmer 8 minutes or until tender.
