Tarragon Turkey Burgers

Posted Sep 13 2008 3:51am

Adapted from Cooking Light, January-February 2003.

2 lbs. ground turkey
1/2 cup dry bread crumbs (I use crushed low-sodium saltines)
1/2 cup finely shredded zucchini
1/4 cup chopped onion
1 tablespoon chopped fresh or 1 teaspoon dried tarragon
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
Cooking spray
8 hamburger buns

1. Preheat broiler.
2. Combine first 7 ingredients in a large bowl. Divide turkey mixture into 8 equal portions, shaping each into a 1/2-inch-thick patty. Place patties on a broiler pan coated with cooking spray, broil 6 minutes on each side or until thoroughly cooked. Serve on hamburger buns with desired toppings.
