2 pounds pork loin roast, boneless (I use a pork tenderloin)
3 garlic cloves, minced
1/2 teaspoon black pepper
1 teaspoon ground cumin
2 teaspoons ground allspice (I used Chinese five-spice powder and it was delicious)
1 teaspoon chili powder
1 teaspoon cinnamon
2 tablespoons vegetable oil
6 scallions, coarsely chopped
Optional: cayenne pepper or Scotch bonnet peppers to taste
Preheat oven to 350 degrees F. Mix last 8 ingredients and coat pork tenderloin. Marinate at least 2 hours. Roast, uncovered for about 35 minutes, or until the internal temperature is 160 degrees F. Serves 6.
