From Rachael Ray's "30-Minutes Meals 2." A quick variation on the burger, full of dialysis-friendly veggies. You might include other burger toppings you like, onion or a slice of pickle, if you can allow yourself a little extra sodium. Just try to avoid those high-potassium tomatoes.
1 lb. ground turkey breast
2 tablespoons fresh thyme (4 or 5 sprigs) stripped and finely chopped
Freshly ground black pepper to taste
2 scallions, finely chopped
1 carrot, shredded or 1/2 cup packaged shredded carrots
1/2 small zucchini, finely chopped or shredded
Extra-virgin olive oil, for drizzling
Green leaf or romaine lettuce
1 cup store-bought fresh refrigerated creamy ranch or herb dressing
4 crusty rolls, split
Combine first 7 ingredients in a bowl and form into 4 large patties. Brush or drizzle patties with olive oil and cook 7 minutes on each side over medium-high heat in a nonstick skillet. Serve on split crusty rolls with lettuce and dressing.
