Adapted from an Alton Brown recipe. His recipe included mango and banana, which are too high in potassium for the dialysis diet. I don't see why you can't substitute any number of lower-potassium fruits and it would be just as delicious. The small amount of yogurt in the dressing adds only 175 mg potassium and 108 mg phosphorus to the entire dish. The ounce of walnuts adds some nice crunch, and contributes only 125 mg potassium and 98 mg phosphorus to the entire dish. Of course, the nuts can be omitted entirely.
1/2 cup plain yogurt
1/4 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon honey
1 teaspoon pure vanilla extract
Pinch of kosher salt
Freshly ground black pepper
1 Granny Smith apple, cored and sliced
1 cup seedless grapes, halved
1 pear, peeled, cored and diced
10-12 medium strawberries, halved
1 cup each of your choice (pick two):
Blueberries
Raspberries
Pitted sweet cherries
Peach slices
Pineapple chunks
1 ounce chopped walnuts, toasted
In a small mixing bowl, whisk together the yogurt, mayonnaise, lemon juice, honey, vanilla extract and salt. Season with pepper to taste. Set aside.
Place all of the fruit and nuts into a large mixing bowl and toss to combine. Add the dressing, toss and serve.
