Cranberry and Ginger Sauce

Posted Sep 13 2008 3:51am

From "Craig Claiborne's Gourmet Diet" cookbook.

1 lb. fresh cranberries
1 1/2 cups water
1 1/2 cups sugar
1/4 cup finely chopped preserved stem ginger
1 tablespoon syrup from the jar of preserved stem ginger

Pick over the cranberries to remove any that are soft or bruised.

Combine the water and sugar in a saucepan and add the cranberries. Cook for about 5 minutes.

Add the chopped ginger and ginger syrup and remove from the heat. Let stand until cold. Serve alongside roast turkey.
