This is a REALLY easy and quick dinner. It is what I call a 'Pantry Meal'; you can find everything in your pantry! Good for when you are in between shopping.
Good protein from the tuna, carbohydrates from the wholemeal pasta and fibre from the beans.
Did I mention it is also really tasty?
1 can crushed tomatoes
1 tbsp tomato paste
1 tbsp pesto
1 large tin tuna
1 cup frozen peas
2 cup wholemeal pasta
1/2 can bortelli beans
2 finely chopped garlic cloves
finely grated parmesan cheese
salt & pepper to taste
Boil a pot of water and add the wholemeal pasta, cook al dente to the packet's instructions.
Heat some olive oil in a large saucepan and add finely chopped garlic, when just browning, add the tuna and stir until combined.
Add the tin of tomatoes, tomato paste and pesto and stir through. Simmer for 5 mins and then add beans and frozen peas. Simmer a further 5 - 10 mins until well heated.
Serve on pasta with parmesan cheese.
