This was a super quick, dinner that I threw together with leftovers. Just using the vegetables I had, some superfood quinoa with tahini , lemon and garlic. It was actually really tasty, I was a little surprised! It would also work great with some chicken breast or tofu through it.
1 cup quinoa
2 small potatoes, cut into small pieces
1 cup whole pea pods
1 large king mushroom, cut into chunks
1/2 onion, diced
2 tbsp tahini paste
1 garlic clove, crushed
1 chicken/veg stock cube
1 cup boiling water
Boil about a cup and half of water and cook the quinoa for about 15 minutes. While it is cooking, add the crushed garlic and onion to a frypan with a bit of olive oil. Once the onion softens, throw in the potato and cook for a few minutes on high.
Add the mushrooms and once everything is nice and brown, add in the tahini and juice of one lemon (throw the lemon halves in too.) Then dissolve a chicken or vegetable stock cube in a cup of boiling water and add to the pan. Simmer and reduce. Serve mixed through quinoa.
