This is a great sin-free Alfredo sauce recipe. So easy, so yummy, SO not fattening...you like? I made this last night and tossed it with whole wheat linguine and grilled chicken. Divine! I will have to test it on the ultimate Alfredo connoisseur (brother Beast), who would bathe in the stuff if he could.
1 Cup low fat milk
2 t arrowroot (or cornstarch)
2/3 Cup Parmesan cheese
1/4 t garlic or onion powder
1/4 t pepper (white or black)
1/4 t nutmeg (optional, but really good)
3/4 C fat free Greek yogurt
In a sauce pan over medium heat, whisk together milk and thickener for 3 minutes. Remove from heat and whisk in cheese. Add all remaining ingredients and whisk until well mixed. Toss with whole wheat pasta and grilled chicken, or cooked shrimp, or veggies!
