I can’t believe I found Libb’y Pumpkin in a shop in my city centre.  It cost £3.20, but it was worth it!

inspired by The Gracious Pantry

• 1 1/2 cups of oats
• 1/2 cup of pumpkin
• 1/2 cup of peanut butter
• 2 tsp of honey
• 1/3 cup of canola oil or unsweetened apple sauce
• 1 tsp of cinnamon
• 1 tsp of fresh ginger
• 1 tsp of nutmeg

Toast the oats for 15 minutes at 350 degrees…

Mix all the ingredients together including the oats…

Spread the mixture on non-stick baking sheet and bake at 350 degrees for 20 minutes  until golden…
