Two winners and a winning recipe! That’s what I have for you tonight folks!!!
I got a ton of requests from a few WIAW’s ago to share my baked eggplant parm recipe! Well I forgot to remind you all that its already on my recipe page !! But that’s okay because I incorporated it into a new recipe that’s even more delicious than just the eggplant on it own!
Eggplant Parm Over Roasted Spaghetti Squash

1 small spaghetti squash

1 eggplant, thinly sliced

1 cup tomato puree
-
2 tbsp parmesan cheese

1/4 cup chopped basil
-
1 tbsp sundried tomatoes, chopped

spices: basil, oregano, thyme, rosemary, chili flakes
Preheat oven to 425.
Put one layer sliced eggplant in a baking dish, top with 1/2 cup of sauce and a sprinkling of the spices you’re using. Top with a second layer of eggplant, and spread with sauce and spices once again. Sprinkle parmesan cheese over the top. Bake for 40 minutes.
While eggplant begins cooking, slice spaghetti squash in half and remove the seeds. Put both halves cut side down in a microwave safe dish and microwave for 5 minutes. When time for eggplant lowers to 25, place spaghetti squash in the oven and bake for the remaining 25 minutes.
Once cooked remove both items from the oven. Scoop out squash from its skin and place in a bowl or on a plate. Top with about a cup of eggplant mixture. Sprinkle fresh basil and sundried tomatoes on top!

This was so yummy! It was my first spaghetti squash of the season and it was so incredibly fresh since it was from the farmers market! I always forget how much I love spaghetti squash. The sweetness of it pairs SO well with the sweetness of the tomato sauce. Love that combo!
