Today is usually my day off, but as you read this, I am sitting in an insurance class. Please don’t be jealous. I know all of you out there wish you were sitting in an insurance class. The wonderful state of PA (and I’m sure every other state) makes anyone with their insurance license earn 24 credits every two years in continuing insurance education. I think my class today is about cleaning and restoring omes after they suffer mishaps such as water and smoke damage. Honestly, most classes are not that bad and are interesting, but this week I could have really used my day off. The days to Halloween are ticking down and my costume isn’t going to make itself!!
Alright, enough about insurance and costumes. This is What I Ate Wednesday, not What I Want to Complain About Wednesday! So…onto the food!
For breakfast yesterday, I continued the fall blogger tradition of having pumpkin oats. I also broke the blogger tradition of taking a picture of it. So…let’s use some imagery…soft creamy oats with a big glob of orange pumpkin right in the middle, a little drizzle of maple syrup over the top and a little sprinkling of cinnamon and nutmeg. Can you picture it? Deee-licious!!
For a mid-morning snack, I had some cheddar Goldfish. My boss made us all little Halloween treat bags (or I should say huge Halloween treat bags) that had Goldfish, animal crackers, peanut M&Ms, Mini Reese’s PB Cups, Sweet and Sassy BBQ chips (my nickname at work is ‘Sassy’), a bag of Bath & Body Halloween lotions, a lip gloss, soap, and a candle, and a little witch figurine. It was a pretty sweet swag bag! Anyway…I gobbled the fish right up! Oh, and I also had a few of the peanut M&Ms. I’m pretty proud of myself for not eating the entire box. They are my favorite candy.
For lunch, I had a bowl of homemade chicken soup from my grandma. Thank you, Gram, for being so good to me.
For my second lunch/dinner, I made myself a black bean and cheese quesadilla with salsa. I taught a Jazzercise class after work last night, so when that happens, I sometimes try to eat an early lunch and then squeeze in a meal later in the work day before I leave to teach that can be a partial dinner. That way, I am not starving when I get home and stuff my face with a ten-course dinner at 9pm!
When I did get home at 9pm, I wasn’t very hungry, but I knew if I didn’t eat something small, I would wake up in the middle of the night starving, so I had a couple bites of a grilled pizza sandwich that I made my police officer. It’s one of his favorite alternatives to grilled cheese.
I had a small bowl of Frosted Mini-Wheats with vanilla almond milk and called it a night.
FYI: Frosted Mini-Wheats + Vanilla Almond Milk = Lucky Charms. Seriously. It tastes just like them!

Oh, speaking of insurance class…I bought this a couple of days ago…
I plan on this guy being my best friend during my insurance class today. I’m not a huge fan of chocolate bars and I really don’t like dark chocolate, but I am a total sucker for anything sweet and salty!
