Hello beautiful people! It's been a whirlwind past couple of days. I'm still car-less but I've managed to keep myself busy! And on a different note, the weather has been absolutely GORGEOUS lately! What is up with that? It's been sunny and clear, highs in the 70's and low 80's and absolutely zero humidity. If the weather could stay like this forever, I'd be one happy camper here at Fort Bragg. And because of the gorgeous weather I've had some awesome runs lately. The other day I ran for almost an hour!

Anyway, because it's hump day (oh yesss) and I'm stuck on participating in WIAW's with Jen at Peas and crayons , I'm going to wow you with the most random eats ever. 
To start, I had some leftover crab&mushroom and herb risotto I made the other night along with roasted green beans and pecans.  Like I said, totally random. But it did it's job of filling me up and hit the spot.


And because I was so full from breakfast, for lunch I kept it simple with Hawaiian mochi bread and strawberries. If you've never tried mochi bread, please do. Don't walk, RUN to your nearest Asian grocery store to pick up some mochiko flour and make this deliciousness STAT. I've been on a hawaiian food kick lately as one of my dear friends here is Korean/Hawaiian and she's been inviting me over daily to cook with her. I'm learning some great stuff!

Eventually I'm going to try to tweak her recipe to make it less fattening so stay tuned for that. I have quite a few recipes I'd like to share!

As for dinner, the hunk and I threw together some turkey meat tacos with corn tortillas. And I just thought I'd share that yes, for you military folk, you CAN find organic, farm raised meat at the commissary.


And our whole spread. I made an awesome corn and tomato salsa as well, here's the deets if you want to make it yourself:

What you need

Squeeze of lime juice (I used quite a bit)
Squeeze of lemon juice
3 ears white corn, roast in oven or char using burner
1 TBS light olive oil
1 TBS Sea Salt
1 TBS course ground black pepper
4 tomatoes, peeled, seeded and diced
1/4 cup minced red onions
1 TBS jalapeno peppers, minced
2 TBS cilantro, chopped

Mix everything together and let it sit in the fridge for a bit to allow the flavors to blend. So easy!

And that greek yogurt you see in the background is what we use as our "sour cream". You know how I roll.

And notice how we're getting good use out of that patio set? It's money well spent for sure!

4 miles, slow and steady.

As I mentioned earlier we've been having some awesome weather lately. How could I NOT take advantage of the fact by not going on some great runs? I've pretty much run almost every day of this week so far. I really need to get back into the gym to throw some weights around though! Tomorrow will be a full body workout for sure.

And GUESS WHAT!? I finally bought maternity pants for the first time the other day! I figure I'm in my seventh month I should start wearing maternity clothes already....though I haven't yet, haha. And it was such a struggle for me to find pants that actually fit! The pants I tried on would fit perfectly in the thighs, then get tight in the hips because my hips have grown a lot lately, and then the pants would be really loose in the crotch/waist area. It was just awkward. I've always had trouble finding pants for a smaller waist with wide hips but now that my hips are even wider it was especially difficult finding cute, affordable maternity pants. I almost broke down in tears in the dressing room but alas, I found two pairs of pants that work with my body and I think I can work with those for now until I can get bigger. And yes, I'm very happy about this haha.

So that's all I have for now! I'm off to bed early this evening, I'm starting to get insanely tired around 9pm. How lame am I?
