When attempting to emulate yesterday’s day of eats, one might be smart to take a Beano beforehand. Unless you body is accustomed to bean and cruciferous vegetable overload, yesterday’s food might create a boatload of tummy bubbles.
It sounds cute when I say tummy bubbles, right? Forgive me, I have a child and use terms like tummy bubbles now.
Breakfast
1 dippy (or over medium) egg and half a Thomas’ whole wheat bagel with some avocado added in for creaminess.
A pilates class that kicked my butt. I’m crossing my fingers it doesn’t effect my afternoon wog today.
Post Pilates Snack
This. Is delicious. Like, realllly delicious. It’s multi-grain bread from the bakery, toasted, topped with a Morningstar Spicy Black Bean burger, Jenna’s cheddar jalapeno hummus , a sprinkle of feta and baby spinach. Seriously, I devoured this- YUM.
Second Lunch
After my doctor appointment (still evaluating BC options), I met Hubbs at Fusion Bowl. The hot and sour soup (without the crispies) was good. The lettuce wraps? Eh. Disappointing.
First lunch totally wins the gold medal in the lunch competition.
Afternoon Snack
Realizing I hadn’t had many veggies for the day, Hailey helped me whip up a tray of roasted cauliflower. I ended up chowing down on two bowls!
Dinner
I baked tortillas into fun shaped shells (FYI- the whole wheat MISSION tortillas contain partially hydrogenated oils, but Archer Farms/Target brand do not- score!).
Then filled them with homemade (in the pressure cooker!) refried beans , lettuce, corn and black bean salsa, scallions, shredded cheese, cilantro and avocado.
Looks pretty fancy, right? And it was delicious. We ended up turning round #2 into a dip and ate it with toasted tortillas.
And that wraps up another…
And great… I just saw that this WIAW ‘theme’ is supposed to be all about ‘loving your veggies’ on the one day I go pretty light on them… haha!
I’ve noticed my WIAW posts are always so long, because I’m much more of a mini-meals fan than 3 large meals.
How many people still eat 3 large meals?
