WIAW: Trying to Get Back on Track Edition

Hey! Happy Wednesday! Smile

How is everyone? I’m glad to say that I’m actually feeling better and no longer feeling like my head is going to explode from sinus pressure. I am also happy to report that I am no longer sitting around with tissues stuffed up my nose. TMI? I’m sorry. I was quite the sight for the past few days!

Glasses. Breathe Right strips. Tissues up my nose.

Okay. Enough about my disgusting cold. Shall we move onto food? Why, yes, Kelly. That’s a great transition.

It’s What I Ate Wednesday again and, yesterday, I spent the day trying to get back on track. You know, back on the track that doesn’t include cookies, fudge, candy, etc. Anyone else fall into that trap over the weekend? Oh, you did too? Okay. I don’t feel quite as bad then! You guys always know how to make me feel better.

I tried to start my day off on a healthy foot with some oatmeal, but then I remembered that I had one little piece of my mom’s Christmas morning strata left in my fridge. I couldn’t let it go to waste, so I ate that instead.

Unfortunately, I didn’t take a picture of my individual piece, but a picture of it fresh out of the oven on Christmas morning should do just fine.

For lunch, I had an arugula salad with beets, grape tomatoes, cukes, and feta cheese, covered in a basil vinaigrette dressing. Once again, I forgot to take picture. Use your imagination. I know we all have wonderful ones.

For an afternoon snack, I had a Granny Smith apple with peanut butter and a clementine.

I have been eating at least two clementines daily. I was hoping it would keep my cold at bay. Fail.
Oh well. They are still delicious.
Also…my apple was on my plate for approximately five seconds before it turned brown. Ugh.

When I got home from work, I was flying solo for dinner so I whipped up a quick stir-fry with some things that were left in my fridge. I made a stir-fry with water chestnuts, mini corn ears, and mushrooms and covered it in a honey-soy sauce mixture. I threw it over some brown rice.

I’m sorry that it looks so scary. I think it looks like there are snails in my bowl. Gee. I’m just batting a thousand tonight. Talking about sickness and snails as I show you pictures of my food. I really apologize for that. I’ll try to be better tomorrow.

For an after dinner snack snacks, I had some grape tomatoes and also shared a gob and a bowl of popcorn sprinkled with Parm with Lee, who decided to come from work early! I was glad we got to hang! We rarely have nights together!!

So. There we are. You have seen my food and listened to me talk about gross stuff. You guys are the best for always hanging in there with me. Please visit Jenn over at Peas and Crayons , who is under the weather and send her get well wishes!

I promise that tomorrow there will be no talk of tissues and snails.
