WIAW: tomato and summer squash stack

Happy Wednesday!

I hope you all are having a wonderful week so far. I finally decided to go and buy a computer yesterday so i’m back in business :) I didn’t realize how dependent I am on my computer until I was without it for a few days, thank goodness for my iPhone!

Yesterday was my day off work so I had a super long to do list and was determined to get a lot crossed off. I woke up around 7:45 and bounced on the rebounder for 25 minutes. Breakfast was

 overnight oats topped off with some of my vanilla protein granola. I inhaled it before jumping in the shower and heading off to a few meetings!

I ran some errands and came home starving again so lunch was leftover pad thai with tofu

which I ate cold straight from the refrigerator! After lunch I cleaned and organized the house and then headed off to the mall to pick up my computer. I spent the rest of the day playing around on it and ended up snacking for dinner so I don’t have any pictures. I do however have a delicious recipe I have been wanting to share for awhile now.

Tomato and Summer Squash Stack

Ingredients:

2 large tomatoes

1 zucchini

1 squash

10 leaves basil

1 cup balsamic

1 tbsp olive oil

celtic sea salt

black pepper

Directions: Add balsamic vinegar to a small saucepan over medium heat, let simmer until reduced about 12 minutes. In the meantime cut ends off zucchini and squash and cut in half, using a mandoline or sharp knife cut squash about 1/4 inch thick. Grill on a preheated grill or grill pan 2 minutes per side until soft, set aside. Slice tomato into thin slices and stack starting with tomato slice, 4 pieces of squash/zucchini 1 or 2 pieces of basil, and repeat! Drizzle stack with reduced balsamic, oil, celtic sea salt, and pepper.

This dish screams summer and is packed with delicious color and flavor. I absolutely adore the combination of fresh basil with sweet balsamic reduction, plus you can’t beat the gorgeous presentation of this summer veggie stack!
