Clearly, I’m a bit too fashionably late to this week’s WIAW party. At this rate I might as well make my own ‘What I Ate Thursday Bash’!
This past week I was lacking in culinary creativity so I whipped up some of our favorite simple go-to meals.
Simple Dinner: Homemade Veggie-full Marinara with Whole Wheat Spaghetti
Market Basket sells whole wheat pasta for $1 per box. Foodie win!
Simple Lunch: Chili Bean Veggie Burger, Smoke Gouda, Tomatoes, Pickles and Barbeque Sauce on Harvest Bread with Roasted Broccoli and Green Salad
Something about this beautiful warm weather makes me crave sandwiches. I love subbing veggie burgers/meatballs for deli meat because they are convenient, delicious, and free of nitrate additives.
Simple Leftover Mix: Big Green Salad, Leftover Veggie-ful Marinara, Veggie Meatballs, Alfalfa Sprouts, and Newman’s Own Light Honey Mustard Dressing
This was a simply perfect post-sweaty-run-belly-filler.
Speaking of running, take at look at Mr. Mo cooling off after our speed workout this morning.
I need figure out a way to run through the snowy New England winter because Mo loves it too much to stop!
