WIAW ~ My Computer Ate My WIAW

finally found some kale here ~ hooray 

It's Wednesday...this week seems to be flying by already!
Today is the day I share my eats with y'all from yesterday.  
Peas and Crayons 
I noticed since running my half on Saturday I have been craving veggies, veggies and more veggies.  So, yesterday I consumed a ridiculous amount of vegetables.  I had made this awesome collage of what i ate...
BUT then my laptop crashed and I lost it. Now I'm pouting and refuse to make another one. BOO!The Breakdown Breakfast - berry/banana/egg white smoothiesnacks - m&m peanuts, lidnt salt dark chocolate (2 pieces)Lunch - lentil soup with a big bowl of spinach ( a whole bag of frozen spinach)H2O, H2O and more H2ODinner - cheese and crackers, spicy turkey,  cauliflower poppers (an entire head of cauliflower)  and kale chipsDessert - another fruit smoothie
I have been dying to try out kale chips since I moved to Trinidad and started reading blogs.  However, I never can find any kale here.  Then on Monday, I found some!  I made them yesterday and we LOVED them.  Glen loved them too!
The Verdict - I am now on a "kale hunt" - will be making these soon!

Kale ChipsIngredients1 big bunch of kalelemon pepper seasoningolive oilsalt and pepperonion powdergarlic powder
Ready to Cook!Season kale with all the above ingredients and put on a cookie sheet at 325 for 20 minutes/Enjoy!
On the workout front...

I finally laced up my sneakers after 3 days and got back out there after my 1st half on Saturday.
It felt great ~ scratch that ~ it felt awesome!

My first post 1/2 marathon run and it felt great. I was dying to get out there!
